Place potatoes into a medium saucepan and cover with cold water, add the salt. Bring to the boil, lower the heat and simmer for 6 minutes to parboil.
Meanwhile, heat a large deep sided frypan to med/ high heat. Add the oil and onion and fry the onion until golden.
Add the garlic and ginger and fry for 30 seconds, add the spices and fry for 30 seconds.
Add the stock or water and salt, bring to the boil then simmer, covered with a lid, until the potatoes are tender.
Meanwhile, mix together the ingredients for the flavoured yoghurt in a small bowl.
Serve potatoes garnished with green chilli, coconut flakes and coriander with the yoghurt on the side.
