POTATO BAKE
BECHAMEL SAUCE
Preheat oven to 200 degrees fan forced. Prepare the Carisma potatoes by washing, peeling and thinly slicing. Set aside in a bowl.
To make the béchamel sauce simply add the butter into a saucepan and allow to melt. Once it begins to simmer mix though the flour with a wooden spoon. When this begins to simmer, gradually add in the milk (Note: It will begin to clump, this is normal it will smooth out once all the milk has been added).
Once the sauce is a creamy consistency, add in parmesan, garlic powder, salt and pepper and mix well. Set aside on a very low heat.
Slice the onion into very thin slices (approx. 1–2cm) and dice the bacon. Once all your ingredients are prepared, begin layering the potato bake. Start by adding about 1/4 cup of the sauce into the bottom of your baking dish. Assemble the potatoes so they are slightly overlapping. Season and layer with both cheeses, bacon, onion, breadcrumbs and thyme, continue this method until you have used all of the potatoes. On the top layer be extra generous with cheese and breadcrumbs.
Cover with foil and bake for 90 minutes. Take the foil off and continue to bake for another 30 minutes until golden on top. Once you take it out of the oven allow it to sit for 5-10 minutes before slicing.
