Partly boil the potatoes for 15 minutes and then cut into wedges. Marinate with olive oil, oregano, salt and pepper. Add to tray.
Place fish into centre of tray.
Melt butter, add garlic, thyme, lemon juice, salt and pepper and brush over fish. Add sliced lemon and thyme on top.
Cover with foil and bake for 15-20mins. Enjoy!
