A fun, flavourful family project for Easter festivities. These Carisma Easter Nests are crispy and delicious! Serve with some crème fraiche, salmon and a egg for a winning dish!
STEP 1
Preheat the oven to 210°C/200°C Fan. Grease a standard-sized muffin pan (Tip: Inserting strips of parchment paper can make it easier to take out the nests once they’re baked).
STEP 2
Grate the potatoes and the onion, combine them in a clean tea towel and wring out all the moisture until the mixture is as dry as possible, then transfer to a mixing bowl.
STEP 3
Add the garlic, flour, thyme, egg, salt, pepper, and parmesan. Stir until everything is evenly mixed. Should the mixture seem too soggy, sprinkle in a bit more flour.
STEP 4
Evenly distribute the mixture into the muffin wells. Next, use a small spoon to form a small well in the centre of each to shape a nest, making sure the base is not exposed.
STEP 5
Bake for 30 to 35 minutes, until the centres turn slightly golden and the edges become golden brown and crisp. Allow to cool within the tin for about 5 minutes before removing.
STEP 6
Combine the dill, chives, parsley, lemon juice, crème fraiche, and a pinch of salt and pepper in a small mixing bowl.
STEP 7
For plating, spoon some of the crème fraiche mixture into each nest and top with salmon or hard-boiled eggs (or both). Add a squeeze of lemon before serving, and serve while warm. Enjoy!
