STEP 1
Preheat oven to 190°C. Toss potato slices in olive oil, season with salt & pepper, place onto a oven tray lined with baking paper and roast for 15 minutes or until golden and tender.
STEP 2
Mix together tomato and cucumber in a small bowl.
STEP 3
To assemble, spoon hummus between two bowls, add remaining ingredients in sections around the bowl.
STEP 4
Finish with a sprinkling of mixed seeds and dukkah.
