FOR SLAW
STEP 1
Place the potatoes in a saucepan of well salted cold water. Bring to the boil, then cook until just tender. Place onto paper towels in a single layer to cool.
STEP 2
Place flour, baking powder and salt into a medium bowl, whisk to combine then gradually add soda water, whisking until smooth.
STEP 3
Combine slaw ingredients in a medium bowl and mix to combine.
STEP 4
Place chipotle mayonnaise ingredients in a blender and blend until smooth.
STEP 5
Heat a deep fryer (or heavy based saucepan filled halfway with oil) to 180°C. Working in batches, dip potato slices in the batter and fry until golden and crisp. Set aside on a wire rack set over a tray. Dust with chicken salt.
STEP 6
Serve potato scallops with slaw and chipotle mayonnaise on the side.
