STEP 1
Place the potatoes in a saucepan of well salted cold water. Bring to the boil, then cook until tender. Drain well, return to the pot, allow excess steam to evaporate then shake the pot to roughen the edges of the potatoes.
STEP 2
Meanwhile, preheat oven the 220°C. When the potatoes are ready, place the oil in an oven tray and place in the oven for 3 minutes to heat up.
STEP 3
Carefully remove the tray from the oven and place the potatoes onto the tray, turning to coat in the hot oil.
STEP 4
Roast for 15 minutes, add pepperoni, stir to mix through.
STEP 5
Roast for a further 5 minutes or until golden and crunchy.
STEP 6
Meanwhile, place ricotta, olive oil, lemon juice and salt in a food processor and blend until smooth.
STEP 7
Spread a layer of whipped ricotta on a serving plate and top with roast potatoes.
STEP 8
Scatter over sun dried tomatoes and parsley and drizzle with chilli honey.
