Enjoy a tropical twist on a classic baked potato, topped with ham, pineapple, melted cheese, and a delicious homemade tomato sauce for a unique and tasty Hawaiian-inspired dish
STEP 1
Preheat the oven to 200°C. Line a tray with rock salt (optional. This will just keep them upright while they bake). Arrange potatoes on salt and bake for 1-1.5 hours or until tender when pierced through the centre with a skewer*.
STEP 2
Heat oil in a pot and fry garlic for 30 seconds then add tomatoes. Season with pepper. Cook for 10-15 minutes until thick and rich.
STEP 3
Cut a cross 3/4 deep into the cooked potatoes but not all the way through and pinch to expose the flesh. Top with sauce, ham, pineapple, cheese and a pinch of oregano. Enjoy!
*For faster cooking, you can pierce the potatoes with a fork and then cook them in the microwave for 15 minutes first, then bake in the oven until the skin is crispy and the centre is tender
