STEP 1
Preheat oven to 190C. Place potatoes in a medium saucepan, cover with water and bring to the boil. Cook for 8-10 minutes or until tender. Drain in a colander and shake the wedges to break them up slightly.
STEP 2
Toss with olive oil and salt, transfer to a lined oven tray in a single layer and roast for 25-30 minutes, turning once, until golden brown and crisp.
STEP 3
Meanwhile, place honey, chilli and lemon juice in a small saucepan, bring to the boil then remove from heat. Serve wedges with sour cream and chilli honey.
