GREEN SAUCE
STEP 1
Pre-heat oven to 200 degrees.
Start by halving the potatoes and adding them into a large pot of salted water. Bring to the boil and allow to boil for 15 minutes or until fork tender.
STEP 2
Drain and allow to slightly cool.
STEP 3
Transfer to a lined baking tray and use a cup to flatten or ‘smash’ slightly.
STEP 4
Coat in olive oil making sure each potato is generously coated. Season and place into the oven to bake for 45-60mins or until super crispy and golden.
STEP 5
To make the sauce, simply add all ingredients into a jug and use an immersion blender to blend until smooth and creamy. Adjust consistency as needed but you want it to lean towards the thicker side, not runny.
STEP 6
Serve potatoes on a bed of the herby green sauce and garnish with chopped parsley.
