Relish Justine Schofield’s Potato Potage, a comforting soup with tender potatoes, leek, and onion simmered in rich stock, finished with fresh chives and a drizzle of olive oil for a hearty, flavourful dish.
STEP 1
Heat a large pot over medium heat. Add the butter, onion, leek and sweat for 8-10 minutes until softened, stirring occasionally.
STEP 2
Add the stock and cook for 5 minutes before adding the potatoes, thyme and bay leaf and cook for a further 10-15 minutes or until potatoes are tender.
STEP 3
Sprinkle chives and drizzle with olive oil to serve.
