FOR COATING
STEP 1
Place all the ingredients for the doughnuts in a stand mixer fitted with the paddle attachment and beat for 5 minutes. Cover with glad wrap and allow to prove for one hour or until doubled in size.
STEP 2
Mix together parmesan and mustard powder in a shallow bowl.
STEP 3
Mix together mayonnaise and chives in a small bowl.
STEP 4
Preheat deep fryer (or heavy based saucepan filled halfway with oil) to 170°C. Working in batches, fry tablespoon amounts of batter until golden and puffed (about 3 minutes).
STEP 5
Drain the doughnuts on paper towel, then roll in the parmesan mix while warm.
STEP 6
Serve doughnuts with chive mayonnaise on the side.
