STEP 1
Cut the potatoes into chunks, leaving the skin on. Place in a saucepan of cold water and bring to the boil. Cook for approximately 15 minutes or until very tender.

Drain thoroughly and allow to steam dry for a few minutes.
STEP 3
Mash until smooth, then allow to cool.
STEP 4
Add the grated cheese, cornflour, egg, garlic powder and salt. Mix until a soft dough forms.
STEP 5
Refrigerate for approximately 30 minutes to firm.
STEP 6
Preheat oven to 200°C fan-forced and line a baking tray with baking paper.
STEP 7
Place the potato mixture between two sheets of baking paper and roll to approximately 1.5cm thick.
STEP 8
Cut into rounds using a small cookie cutter. Use a straw to create two eyes and the edge of a teaspoon to create the smile.
STEP 9
Transfer to the tray and lightly spray with olive oil.
STEP 10
Bake for approximately 20 to 25 minutes, carefully turning halfway, until golden.
