STEP 1
Combine cream, milk, potatoes, garlic, sage and bay leaves in a large pot. Season with salt and set over med-low heat.
STEP 2
Bring to a boil, reduce heat and simmer gently for 15-25 minutes or until potatoes are fork-tender.
STEP 3
Drain potatoes in a colander set over a heatproof bowl to reserve the liquid. Remove the sage and bay leaves. Return the potatoes to the pan.
STEP 4
Add the butter and mash the potatoes until smooth and creamy. Gradually add the reserved cooking liquid, in 1/4 cup increments to ensure the potatoes say fluffy. Adjust seasoning to taste and enjoy!
