TO SERVE
STEP 1
Place the potatoes in a saucepan of well-salted cold water. Bring to the boil, then cook until tender. Drain well and allow excess steam to evaporate.
STEP 2
Mash with a potato masher or put through a ricer.
STEP 3
Place warm potatoes, cottage cheese, garlic and salt into a food processor and pulse until smooth.
STEP 4
With the motor running, add olive oil and process until incorporated.
STEP 5
To serve, spread dip onto a serving plate, add olives and pinenuts and sprinkle with chopped parsley.
STEP 6
Serve with baby cucumbers alongside.
