TO SERVE
STEP 1
Preheat oven grill. Mix together potato, cabbage and peas in a medium bowl and season with salt and pepper.
STEP 2
Heat oil and 1 tbsp butter in a 20cm frypan over med-high heat, add potato mix, press down with a spatula and cook for 8 minutes.
STEP 3
Melt remaining butter, brush the top of the potato mix and place under the grill until golden.
STEP 4
Serve bubble and squeak with crispy bacon, poached egg and leftover gravy.
