Into a saucepan filled with water, add the washed potatoes with the salt and baking powder. Boil until fork tender.
Pre-heat oven to 200ºC, fan forced. Drain water from pot and allow potatoes to cool slightly before transferring to a flat baking tray. Meanwhile, add garlic, cumin, chilli powder, smoked paprika, dried oregano, black pepper, salt, lemon and olive oil to a bowl and mix. Then oil up the baking tray.
Once cooled, add potatoes to baking tray and use the bottom of a mug to squash. Allow the steam to totally dissipate before adding the spice mixture. Generously coat each potato with the spice mix and bake for 45mins or until golden and crispy.
Once cooked and ready to serve, top with crumbled feta, herbs and lemon zest. Enjoy.
