Thinly slice potato and soak in water. Rinse and dry.
In a saucepan, add the butter, garlic, mixed herbs and seasonings. Melt.
Use some of the melted butter to grease a muffin tray.
Add cream to rest of melted butter and mix well until combined.
To assemble add a few layers of potato, a tsp of the butter cream, cheese and repeat.
Cover with foil and bake at 180ºC for 30mins. Take out of the oven, uncover, add more cheese and bake for another 20 minutes or until golden.
Allow to cool completely before taking out of the tin. Enjoy.
