Nonna Mitolo’s Potato Salad

Ingredients

Method

STEP 1

Place potatoes in a saucepan of salted boiling water and cook until just tender. Drain potatoes and place in a bowl.

STEP 2

Add the extra virgin olive oil to the warm potatoes, together with the finely diced red onion, crushed garlic, parsley and toss well.

STEP 3

Season with salt and pepper. Salad can be served warm or cold.
