STEP 1
Peel potatoes if desired then cut into quarters. Place in a large pot of cold water. Cover, bring to the boil, then turn down and simmer for 10-15 minutes or until tender.
STEP 2
Strain potato in a colander and allow to air dry for a minute or two. Mash back into the cooking pot using a potato ricer, pushing through a sieve, or using a potato masher. Use a spatula to fold in olive oil, milk and salt. Serve warm.
TIP
