STEP 1
Preheat oven to 180°C and line a baking tray with parchment paper.
STEP 2
Place the potatoes in a pot of cold, salted water. Bring to a boil and simmer for 15–20 minutes until tender. Drain and allow to cool slightly. Mash until smooth, then weigh out 225g for the recipe.
STEP 3
Transfer the mashed potato to a mixing bowl and add the chicken mince, garlic powder, cheese, salt and pepper. Mix to combine.
STEP 4
Form the mixture into 25 bite-sized balls and roll in the breadcrumbs.
STEP 5
Transfer to the prepared baking tray and spray or lightly brush with olive oil.
STEP 6
Bake for 20–25 minutes or until golden and cooked through. Serve warm with ketchup or aioli.
