Enjoy Justine Schofield’s Smashed Roasted Potatoes, where tender steamed potatoes are smashed into crispy disks, roasted to golden perfection, and served with a side of creamy sour cream and sweet chilli sauce for a deliciously crunchy treat.
STEP 1
Place the potatoes in a steamer pot filled with some water. Turn the heat on a medium and bring up to the boil. Steam for 15 minutes or until the potatoes are tender. Remove from the pot and cool for 2 to 3 minutes or until the steam has dissipated.
STEP 2
Preheat the oven to 200°C.
STEP 3
Using a masher, smash the potatoes until they turn into flat disks.
STEP 4
Heat oil in a roasting pan, add the potatoes and coat all over in the oil. Season with salt and roast in the oven for 25 to 30 minutes, until crunchy and golden brown.
STEP 5
Serve with sour cream and sweet chilli sauce.
