Dice the potatoes into cubes and place into a large pot with boiling water and a pinch of salt. Bring to a boil then lower to simmer for 15-20 minutes or until tender. Strain and set aside to cool slightly.
Mix together the dressing ingredients – tasting to ensure its adequately seasoned.
Place the potatoes, eggs, spring onions and celery into a large bowl and pour over the dressing. Mix to combine then either place into the fridge to cool fully before serving or serve immediately with an extra sprinkling of chives!
