CREAMY DILL SAUCE
Preheat oven to 210°C. Line a large baking tray with baking paper.
Peel the potatoes and cut them into small chunks and place on the baking paper. Sprinkle with olive oil, garlic and herbs and toss to combine. Season well with sea salt and pepper.
Roast in the oven for 25 – 30 minutes (toss potatoes half way through cooking time to ensure they are cooked evenly). Cook until golden brown and soft in the inside.
In the meantime make the dressing. Combine all the ingredients in a jug and whisk to combine.
Place the potatoes in a large bowl to serve. Drizzle with the dressing and garnish with dill and chives.
