STEP 1
Preheat the oven to 190°C. Carefully insert a skewer into the end of the potato and gently push it all the way through.
STEP 2
Make a small cut at one end of the potato with a knife, until you hit the skewer, then carefully twist the potato round to continue the cut all the way along, creating a spiralised effect. Try and make the potato spirals thin slices of potato for extra crunchiness.
STEP 3
Separate/pull out the potato spirals carefully along the length of the skewer to ensure gaps are even and brush over with the olive oil. Repeat on all potatoes.
STEP 4
Mix in a bowl the dried herbs mix, grated parmesan, paprika, cumin, garlic powder, a pinch of sea salt and black pepper. Sprinkle the mixture over the potato spirals and line the potato swirls up on a baking tray. Bake for 50 minutes, or until cooked through, golden, and crispy.
STEP 5
Sprinkle some extra parmesan and parsley over the potato spirals and serve on its own or with tomato sauce or your favourite sauce. Enjoy!
