Boil potatoes until just soft, then preheat oven to 230°C and line a tray with baking paper.
Meanwhile, thinly slice onion and garlic. Heat a pan with a drizzle of extra virgin olive oil, add onion, garlic and balsamic vinegar and cook on low-medium for about 20-25 minutes caramelised. If they start to stick, add a splash of water!
Add soaked seeds/nuts to a blender with water, apple cider vinegar, onion and garlic powders, dates and salt. Blend until super smooth and creamy.
Add in half the caramelised onion and blend again until smooth. Season to taste.
To finish the fries, chop potatoes into fries and place on baking tray. Bake for about 20 minutes until crispy + golden.
Serve dip topped with remaining caramelised onion and chopped chives, and your fries to dip!
