Preheat oven to 180 degrees celsius and line a large tray with baking paper.
Arrange in a single layer on the lined tray. Coat potato wedges with olive oil. Sprinkle with 2 tsp of taco seasoning. Bake for 40 mins or until potato wedges are golden and tender.
In a bowl combine refried beans and 3 tsp of taco seasoning. Set aside
Mix all ingredients for Pico De Gallo and Guacamole in separate bowls. Set aside.
Remove fries from oven and top with refried beans, then bake for 5 minutes. Remove again and add jalapeños and sprinkle cheese on top, bake for another 5 minutes or until cheese is melted.
Remove from oven and top with Pico De Gallo, Guacamole, sour cream and coriander.
* Can be replaced with beef mince, just cook in a pan before hand and add another 2 tsp of taco seasoning.
