Heat the oven to 200 degrees and line a baking tray with foil.
Poke Carisma potatoes with a knife and then cook potatoes in the oven for 1 hour (or can use the microwave for shorter cooking time).
Once potatoes are done, let them cool down. Cut cooled potatoes in half and scoop out pulp.
Place the pulp into a separate large bowl and add cooked bacon, sour cream and spring onions to combine.
Spoon potato mixture back into the potato shells and sprinkle shredded cheese over the top.
Bake again for 12 minutes, or until cheese is melted. Take out of oven when down and serve.
