STEP 1
Preheat oven to 200C. Place potatoes directly onto the oven rack and bake until tender (about 1 hour).

Allow to cool slightly before cutting in half. Carefully scoop out the potato flesh, ensuring the skin is not pierced, place into a small bowl, add the butter, season with salt and pepper and mix well.
STEP 3
Meanwhile, place the bacon onto a baking paper lined baking tray and place in the oven for 8 minutes.
STEP 4
Place the potato halves onto a baking tray, add 2 tbsp of the potato mix in each half (use leftovers for another use, such as vegetable fritters), add a bacon rasher and gently crack an egg into each half.
STEP 5
Bake until the egg whites are set.
STEP 6
Serve sprinkled with spring onion and dukkha
