STEP 1 Slice the potatoes thinly with the crinkle-cut attachment on a mandolin, rotating the potato 90 degrees every cut to create the lattice-like effect. If you don’t possess a mandolin with this attachment, simply slice the potatoes thinly.
STEP 2 Pour boiling water over the potatoes and allow them to stand for 30 minutes. Drain the potatoes and dry well.
STEP 3 Heat a deep fryer to 190C. Fry the potatoes until golden, drain on paper towel and season well with sea salt.
