FOR FRIED ONION
STEP 1
Heat oil and butter in a large frypan over med-high heat, add potatoes and salt and fry until beginning to colour.
STEP 2
Add ½ cup of water, bring to a simmer, cover and cook for 10 minutes or until tender, adding a little more water if necessary.
STEP 3
Continue to fry until golden, add spices and cook for a further two minutes.
STEP 4
Meanwhile, heat oil in a medium frypan over high heat, add onion and fry until golden.
STEP 5
Add curry leaves and mustard seeds and fry until the leaves are crisp. Set aside on paper towel to drain.
STEP 6
Serve potatoes drizzled with yoghurt, topped with the fried onion mix and garnished with green chilli.
