Place flour and salt into a small bowl, whisk egg and milk together in a second small bowl and mix the oil through the breadcrumbs and paprika in a third bowl. Line a baking tray with baking paper.
Mix the chives through the mash, take a large tablespoon of the mash and flatten it in the palm of your hand and place a piece of cheese in the centre. Fold over the mash to enclose the cheese and form into a cylindrical shape. Repeat with remaining mash.
Roll each croquette in the flour, dip into the egg wash and coat well in the breadcrumbs. Place in the refrigerator for 30 minutes to firm up. Preheat oven to 200C.
Bake in the oven for about 12 minutes or until golden.
