STEP 1
Preheat oven to 160°C fan forced.
STEP 2
Peel and boil potatoes for 10mins once the water is boiling. Then, cool completely.
STEP 3
Once cool, use a mandolin or very thinly slice potatotes.
STEP 4
Sautee onion and leek until transparent and soft add fresh chopped herbs to onion mixture add salt and pepper to taste.
STEP 5
Line trays with baking paper, then sprinkle leek onion mixture on baking paper. Layer potato with parmesan and the shredded cheese in between. Whisk eggs and cream together and pour between potato layers also.
STEP 6
When finished layering pour over remaining egg mixture.
STEP 7
Bake at 160°C fan forced for 30 mins or until set. Garnish top with fresh thyme. Slice and serve.
