Zucchini & Carisma Potato Muffins

Method

STEP 1

Grate the zucchini and potato and squeeze out all excess moisture.

STEP 2

Add all ingredients into a bowl and mix well.

STEP 3

Spoon into prepared baking tray and bake at 180ºC for 30 minutes. Enjoy.

Tip: You can cook these and freeze them for later.

Freeze with baking paper in between each so they don’t stick together and you can take them out one at a time. To defrost just take out the night before and you can leave them in a cool place or allow to slowly defrost in the fridge.
