Enjoy Malissa Fedele’s Carisma Potato & Leek Soup, a creamy and comforting blend of tender potatoes, leeks, and herbs, finished with crispy air-fried potato skins, crispy bacon, and fresh chives for a satisfying and flavourful meal.
STEP 1
Peel and cube 1kg Carisma Potatoes. Slice 1 leek (white/light green parts). Mince 2 garlic cloves. Dice 1 brown onion and 1 celery stalk. Strip leaves from a handful of thyme.
STEP 2
In a large pot, heat olive oil over medium heat. Sauté onion, leek, and celery for 5-7 minutes until soft. Add garlic and cook for 1-2 minutes.
STEP 3
Add potatoes, thyme, 2 bay leaves, and 1 tsp dried Italian herbs. Season with salt and pepper.
STEP 4
Pour in 1L vegetable stock, ensuring vegetables are submerged. Bring to a boil, reduce to a simmer, cover, and cook for 20-25 minutes until potatoes are tender.
STEP 5
Remove bay leaves. Blend soup until smooth. Stir in 1 cup cream and adjust seasoning. Simmer for 5 minutes.
Toppings
STEP 1
Prepare all the toppings: Air-fry potato skins until crispy, you can season and drizzle with olive oil for extra flavour. Cook bacon until crispy, then chop. Finely chop fresh chives.
STEP 2
To serve, Ladle soup into bowls, Top with potato skins, bacon, and chives. Enjoy!
