Puff Pastry Greens, Feta & Carisma Potato Pie

Ingredients

Method

STEP 1

In a fry pan cook the onion and garlic until translucent. Add the baby spinach and put a lid on so it can steam for 2-5 minutes.

STEP 2

Add in the seasonings, lemon zest and lemon juice and cook until all the liquid has evaporated.

STEP 3

Roll out your sheet of pastry so it is big enough to fit into your pie tray. Add to the tray and use a fork to poke holes in the bottom.

STEP 4

Add your feta to the spinach mixture and pour into the pie tray. Allow this to cool.

STEP 5

Meanwhile, slice your potato superfine and season with olive oil, salt and pepper. Assemble the potato onto of the pie.

STEP 6

Bake at 180ºC for 30 minutes. Allow to cool before slicing.
