FOR THE GREEN GODDESS DRESSING
STEP 1
Preheat oven to 140°C. Place potatoes into a large saucepan and fill with enough water to cover. Bring to a simmer and cook for 15 minutes or until a knife can be easily inserted into the potato.
STEP 2
Drain potatoes in a colander and allow to steam dry before tossing with olive oil, rosemary, thyme and salt.
STEP 3
Place potatoes onto a large, unlined baking tray and roast for 30 minutes. Increase the temperature to 220°C and continue roasting for a further 30 minutes or until potatoes are deep golden brown. Toss every 20 minutes.
STEP 4
Meanwhile, combine avocado, Greek yoghurt, parsley, basil, garlic, anchovies and mustard in a small food processor. Blitz until smooth, then taste for seasoning.
STEP 5
Spread green goddess dressing on the base of a serving dish, top with potatoes and garnish with extra parsley to serve.
