STEP 1
Bring a large pot of water to the boil and add a big pinch of salt. Add the potatoes, then lower the heat to a simmer. Cover the pot and leave to cook until potatoes are fork-tender (about 20 minutes).
STEP 2
Drain the potatoes and spread on a platter to cool.
STEP 3
Scatter the capers, feta, red onion, dill, parsley and dried oregano over the potatoes.
STEP 4
Drizzle with lemon juice and olive oil, and season with salt and pepper to taste. Toss together and serve.
