Preheat your oven to 220 C fan forced.
Boil the potatoes for about 10 minutes. Once boiled, grate the potatoes.
Add all of the remaining ingredients into a bowl with the grated potatoes, and mix together.
Roll up spoonfuls of potatoes and place them on a baking tray. Bake for 10 minutes, then remove from the oven and flip and bake for an additional 10 minutes. Serve and enjoy!
Tip: You can cook these and freeze them for later.
Freeze with baking paper in between each so they don’t stick together and you can take them out one at a time. To defrost just take out the night before and you can leave them in a cool place or allow to slowly defrost in the fridge.
