Low Carb Parmesan Potato Rosti

Method

STEP 1

Grate the potatoes using a coarse grater, then squeeze out excess moisture with a clean kitchen towel.

STEP 2

In a bowl, combine the grated potatoes with Parmesan, garlic, herbs, egg, flour, salt, and pepper.

STEP 3

Heat olive oil or butter in a pan over medium heat. Shape the potato mixture into small patties and place them in the pan.

STEP 4

Fry each rosti for 3-4 minutes per side, until golden brown and crispy.

STEP 5

Serve hot with your favourite dip or as a side dish. Enjoy!
