Zesty Carisma Potato Salad

Ingredients

Method

STEP 1

Preheat your oven to 200°C. Toss the sliced potatoes with olive oil, salt, and pepper. Spread them in a single layer on a baking sheet lined with parchment paper.

STEP 2

Roast the potatoes for 45-50 minutes, flipping halfway through, until golden brown and crisp on the edges. Set aside to cool slightly.

STEP 3

While the potatoes roast, cook the chopped bacon in a pan over medium heat until crispy. Transfer to a paper towel-lined plate to drain.

STEP 4

Boil the eggs to your preferred doneness (hard-boiled is recommended). Once cooked, peel and cut into quarters.

STEP 5

In a large mixing bowl, whisk together the Kewpie mayonnaise, sour cream, lime juice, sriracha, and a pinch of salt and pepper. Taste and adjust the sriracha and lime for your desired heat and tanginess.

STEP 6

Add the roasted potatoes to the bowl with the dressing. Toss gently to coat.

STEP 7

Stir in the crispy bacon, half of the spring onions, and half of the Parmesan. Mix well and enjoy.
